COOKING TIPS Preparation & Cooking tips: Eighty percent of a pepper's heat comes from its ribs and seeds, where capsaicin oil resides. Capsaicin is a fiery substance that can burn the skin for 12 hours. (Soap will not remove the burn.) Always wear rubber gloves when working with hot peppers, and keep hands away from eyes and nose. Slice stem off the chili and cut in half lengthwise, carefully remove seeds and ribs (for milder flavor), and discard. Two peppers from the same plant can have different heat intensity. Test each pepper. Drink milk - not water - or eat starchy foods if the heat is too intense.
